ISO: ISO of what to do with boneless, thin pork chops? Tired of grilling them. Found some fun

recipes such as Smothered pork chops, but they are braised, and I do not think the thin cut would hold up. WOuld it?

Any creative ideas? They were on sale; w/ a huge end of day coupon of $2.00 off and were in small packages... SO, spent very, very little, for good meat, that I did not have a plan for... AND needs to be cooked tonight / tomorrow! And do not want to grill!

Thoughts?

 
Schnitzel! Flour, egg, panko crumbs; repeat. Pan-fry. Serve with lemon.

I usually ask the butcher to pound these very thinly--the thinner, the better: in Vienna, if you order schnitzel at a good place, it will be larger than the plate it's served on (and typically flatter). smileys/wink.gif

p.s. If all else fails, freeze them in a single layer and revisit the problem another time. smileys/wink.gif
