It's my turn... cut the inside of my left ring finger badly yesterday on a drinking glass - freak accident. Dr. told me not to use it much at all for a couple of weeks because it is at the base in the crease where your finger meets your hand, and stiches (3) can be easily loosened if I'm not careful.

Already dealing with a finger on the other hand - the "good" one - where I get the same sensation as when you hit your funny bone everytime I use it :eek:( due to carpal tunnel flare-up.

She also told me not to do dishes, which makes me happy. Am getting lots of help from hubby (which is why I asked for stupidly simple ideas (just kidding!!).

Checked out the SS posts in the T&T but lots of them require 2 hands anyway, and while I have use of my thumb and index fingers, opening jars, lifting, anything that requires anything with manual dexterity, etc. is out of the question for now!

Ouch. Poor you...it's really hard to not use your hands.

Unfortunately, nothing in my recipes comes to mind. Perhaps this would be a good time to explore the prepared foods section of your grocery store for the main dishes? You could supplement with salad (hubby can chop) and use bags of frozen vegetables that you can snip a corner of the bag and microwave. It's not gourmet, but it will get you through until your finger heals.

I hope you heal quickly.

Oh honey, I just totally winced here! Here's a quickie....

for your husband to prepare. It was taught to me by a guy.

Spaghetti carbonara:

1/2 pound spaghetti
onion
bacon
eggs
parmesan cheese

Prepare a boiling pot for spaghetti. Follow pasta directions for length of time.
Meanwhile....

Beat 3 eggs together with 1/2 cup grated parmesan cheese. Put aside.
Saute a large diced onion with 3-4 oz of diced bacon.

When the onions are soft and the bacon crisp, drain the pasta and put it back into the hot pot. Move to a non-hot burner. Add the sauteed onions/bacon and drizzle with the beaten eggs mixture. Take 2 forks and lift the spaghetti repeatedly to coat. The eggs will cook and make a creamy coating. Taste for seasoning. I usually add only pepper as the bacon has enough salt for us.

You can add cream or herbs to the egg mixture, but I've never found that necessary. You can use as many onions or as much bacon as you like...this is just what I use.

Now stop practicing the Queen's Wave and give your wrist a rest.

 
you hafta be careful here 'cause lotsa spaghetti packages just say...

"cook 'til done". the bast way to tell is to occasionally fling a spaghet at the wall. when it sticks, the spaghetti is done.

 
Oh Dawn! How unfortunate! I would go with either crock pot or roast chicken

recipes. Both are relatively easy for DH/you, especially if you do not add vegies. I like Cyn's idea of wegmans. Perhaps you can pick up some pre-sliced/chopped veggies to make soup or add to the crockpot for some ropa vieja. I would imagine that comfort food would taste great...especially with this weather.

Sorry to hear about hurting yourself, the board is taking it on the chin lately. Here are some ideas. As I recall you are on a low carb type of diet, so some of these may not be suitable. You might want to buy an electric can opener, that was one of the most frustrating things for me, not being able to open up cans. They sell the handless ones, unless hubby will be around to open cans for you? If you need any recipes, just let me know which ones and I will post them for you. Feel better soon!

Frittatas (buy already chopped veggies and meats from a salad bar, so that you can just saute them without all the chopping.) Pop that baby under the broiler and you are set.

Pre-packaged salads and slaws so that you can just dress them, and once again use salad bar veggies and meats to add if you want.

Put some chicken breasts in the crockpot and cover with spaghetti sauce or alfredo sauce and mozzarella; serve with whole wheat pasta and parmesan cheese. One of the "Cream of *** Soup" recipes might be in order, I have some recipes if you need them. Chicken in the crockpot with BBQ sauce to be served as is or as BBQ chicken sandwiches. Teriyaki sauced chicken would be good in the oven or the crockpot.

Some crockpot soups, Ron's Meatball Minestrone, use frozen meatballs and frozen veggies, chicken soup using frozen veggies or salad bar veggies and our old friend the rotisserie chicken.

Roast chicken or chicken pieces, easy if you buy the quarters, halves, whole or which ever pieces you like. Just season as you like and serve with salad and whole grain pasta, dressed with a little butter and parmesan.

Campbell's Reserve or Chunky soups, doctored up or not. They make a decent Chicken Noodle Soup, Clam Chowder and various others. We like them, however they are high in sodium, but they do offer some "Healthy Choices". I keep a supply of these on hand, even now. They come in handy for lunches and light dinners.

Pizzas, using Boboli-type crusts with prepared pizza sauce, grated cheeses and veggies and or meats from the salad bar.

I would depend on some pre-packaged fresh veggies, salad bar veggies or frozen veggies to keep your prep down to a minimum. Also commerical sauces will come in handy now (teriyaki, bbq, spaghetti sauce, etc.), as well as some Noodle/Rice A Roni type of mixes. There are some good commercial whole grain ones. I like the Near East brand, they have all kinds of dry mixes. You can add frozen veggies to make them a one pot meal.

thanks for this easy carbonara recipe marilyn. I made it last weekend.

I always thought it needed lots of cream, but not so! I added a clove of minced garlic and just a bit of milk. It was comfort food at its finest! I used some lovely peppered bacon from the butcher. leftovers for lunch today. can hardly wait. Then, when the bowl is empty, I go on lo carb again. I just gotta get a grip on my carb addiction! Need to uncover the treadmill too.

 
Ang, I am roughly follwing the salmon and salad diet. It emphasizes good, omega3

(or is it 6) fats from all kinds of fish, and allows meat, poultry, and eggs too. It's basically a Mediterranean diet with olive oil, lots of vegetables, high-fiber, whole-grain grains, but minimal fruit and only low-fat dairy (those last two are the only parts I don't stick to very well).

So far, so good.
