I was waiting in the orthodontists office and didn't have anything to write on.

I saw a delicious looking Lemon Bar but not quite as thick.

I hope someone subscribes to her magazine and

might share it here.

Lemon Crisps Recipe from "Reporting the Local Meals,"

Lemon Crisps

Ingredients:

1/2 cup melted butter
2 cups flour
1/2 cup powdered sugar

Mix and pat


in 9 x 13-inch glass baking dish and bake 15 minutes at 350 Degrees F.

The Filling:

2 cups sugar
1/4 cup flour
4 cups slightly beaten eggs
pinch of salt
6 tablespoons lemon juice
1 teaspoon lemon rind
1 teaspoon baing powder

Mix and pour over crust that has come straight out of the oven. Bake for 25 minutes. Sprinkle with powdered sugar. Cut after cooled.

Speaking of lemon cookies, has anyone tried Lemon Melts from Island Bakery Organics (Isle of Mull...

Scotland). Wow...are they good! Thin, crispy, lemony--with half of it coated in lemon-oil flavored white chocolate! I am SO stealing that idea. This cookie is beloved to the point that some customers WROTE A SONG DEDICATED to them AND THEN RECORDED a mp3 that you can listen to on their website! Too funny...you'll be singing that little ditty all day long.

And their Chocolate Gingers! Crisp, gingery snaps half-coated with dark chocolate with a large chunk of candied ginger in the center.

Ohhhh, I forgot about their Oat Crumbles! They remind me of Carr's Hob Nobs, only thinner.

I LOVE this stuff. And now I want to go to the Isle of Mull too.

AngAk, I don't know what happened a cyber space mystery. Everytime I tried....

It's a good story to read. I will try to order a cookbook for a good cause. I made the crisps, but

they turned out very thin for lemon bars. The recipe is almost identical to Joe's lemon bar recipe except for how the crust is made and the addition of lemon rind. My filling was just too "flat". Tasted good, but will increase the filling by half to make it a bit thicker.
