As I mentioned above I skipped the shiitakes and got some portabello caps and marinated them in a (separate from the shrimp-due to the vegetarian guest) bowl and then grilled them too. WOW! it was all delicious. Then I put assorted toppings in individual bowls so each person could make their own salad-scallions, blue cheese crumbles, pom seeds, pistachios, red onion. Both the marinade and the dressing were fabulous.
