Persimmon Cookies
1 cup persimmon puree w/ 1 tsp baking soda
(the persimmons - pointy kind-MUST be very ripe and squishy, puree in blender, no need to peel, slice open incase there are pips)
1 c sugar
1/2 c softened butter or margarine (not unsalted)
1 egg, beaten
2 cups AP flour
1 c chopped nuts
1 c raisins
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp salt
1/2 tsp nutmeg
Cream sugar with butter until fluffy, add egg, add persimmon pulp. Mix dry ingredients separatly with a whisk. Add to sugar-butter mixture. Mix to blend. Last add nuts and raisins by hand. Bake 12-15 minutes on a greased sheet at 350 deg F.
