Had one of these at a potluck recently, but didn't find out who made them so I could get the recipe. Anyway, they were a sort of chocolate cookie with oats and maybe peanut butter? I'm pretty sure they were no bake.

Sound familiar to anyone?

 
a favorite cookie, one of the first recipes I ever made by myself....

Here is one version...
I remember making these easy little no bake chocolate cookies a lot when I was a teenager. There's just one trick; you have to make sure that the sugar mixture boils hard for at least one minute, otherwise the cookies will be sugary instead of creamy.
You can add other ingredients to this basic recipe. Substitute 1 cup of flaked coconut for 1 cup of the oatmeal. Add some chopped peanuts to the recipe for crunch. Or add some milk chocolate chips after the mixture has cooled slightly.

Prep Time: 15 minutes
Ingredients:
•2 cups sugar
•1/2 cup milk
•1/2 cup cocoa
•pinch salt
•1/2 cup butter
•1 cup peanut butter
•3 cups quick-cooking oatmeal
Preparation:
In large saucepan, combine sugar, milk, cocoa, salt, and butter and mix well. Bring to a boil and cover saucepan for 30 seconds to allow steam to wash sugar crystals down sides of pan. Stir mixture and bring it to a boil that can't be stirred down for 1 minute. Then remove from heat and stir in peanut butter until smooth. Add oatmeal and mix well. Do not use regular or instant oatmeal; quick-cooking oatmeal is essential to the success of this recipe.

Here's two without peanut butter.

No Bake - Chocolate Coconut Drop Cookies


Mix together in a large bowl:
3 cups oatmeal
½ cup coconut (and enough to roll balls into)
½ cup chopped nuts
6 tablespoons cocoa

Cook together:
½ cup butter
½ cup milk
2 cups regular sugar

Boil 1 minute. Add 1 teaspoon vanilla. Pour liquid into dry ingredients. Stir well. Cool Slightly. Roll from teaspoon into some coconut and let set up in refrigerator.

(Mixture should be moist to roll easily.)

Freezes well.


No Bake - Date Balls

2 tablespoons butter
1½ cups dates, pitted and chopped
1 cup sugar
2 eggs beaten
¼ teaspoon salt
2½ cups rice krispies cereal
½ cup finely chopped walnuts
1 teaspoon vanilla
2 cups flaked coconut (enough to roll balls into)

Combine butter, sugar, eggs and salt and mix well. Add chopped dates. Heat and cook, stirring constantly, for about 10 minutes, until mixture is very thick. Remove from heat and cool. Add vanilla.

Add rice krispies and chopped nuts. Mix well, using hands if necessary. Form into small balls (small ice cream scoop) and roll into coconut. Let set up in refrigerator.
