I got a package of the little chocolate chip-sized Meltaway Mints at Hickory Farms yesterday. I am not sure what to do with them. Anyone have any recipes for using these? The lady at Hickory Farms said to make regular chocolate chip cookies with these but that didn't sound spectacular to me. TIA!

 
Mimi, here is an idea (more)

There is a "famous" cookie recipe from the 1950s called Starlight Mint Surprise Cookies- there used to be thin chocolate mint wafers on the market (I can't find them anymore) and your candies sound like they would work in this cookie. I now use Andes mints when I make them. It is basically a dough like chocolate chip cookie dough without nuts- make balls of the dough in your hands, push in a few of your mints so the dough wraps around the mints in the center, put on a prepared cookie sheet and press a half walnut into the top. The cookies spread during baking but the mint stays encased and melts so when you take a bite- surprise!! You can use toll house cookie dough or I will type out the recipe if you want me to.

 
I would make a chocolate cookie dough, like the crinkles, and then

after they come out of the oven, press a mint on top like the peanut butter kiss cookies. Chocolate and mint---sounds good to me!

 
Thanks guys! Both great ideas! I also had another idea...

to make the chocolate dough for a double or "reverse" chocolate chip cookie and mix in the mint chips. I'm not making peanut blossoms this year (well I did make some, but we ate them all) so maybe I'll try Ang's idea.

Mint surprise

Starlight Mint Surprise Cookies
These are wonderful- every time you take a bite,
you get a yummy mouthful of chocolate mint
inside the cookie!

Starlight Mint Surprise Cookies

Sift together: 3 cups flour, 1 tsp baking soda,
1/2 tsp salt

Cream: 1 cup butter, 1 cup sugar and 1/2 cup
firmly packed brown sugar

Add to the above: 2 eggs, 1 tbsp water, 1 tsp.
vanilla. Beat well.

Blend in dry ingredients gradually. Mix well
and chill for at least an hour.

Enclose a Rockwoods Chocolate Mint Wafer in
about 1 tbsp of dough. Put on greased cookie
sheet, push down with walnut half on top. Bake
at 375 degrees for 30-35 minutes.

Sob- I can't find Rockwoods Mints in Hawaii so
I use an Andes chocolate mint for each...works
great.

Old family favorite......
I use andies but I cut them in 2 to have a more delicate cookie.
