ISO: ISO recipes for sweet potatoes for someone who doesn't like sweet potatoes

That someone is me... I don't like sweet things with entrees and that includes sweet potatoes (no applesauce with pork, no cranberry sauce with turkey - just don't like it).

I have a few pounds of them from the CSA and while my husband likes them baked with a meal - he won't be able to eat them all.

So - any ideas?

Last year at the CSA they grey white sweet potatoes which were only slightly sweet so when roasted were nice with salt/pepper. But these are orange - realllllly orange.

Tess, roast those orange sweet potatoes. . .

but first cut them into chunks, toss with mild curry powder (hot if you prefer), or pumpkin pie/apple pie spice and a little salt and pepper then toss with a couple of tablespoons of oil then roast away. After cooking you might wish to toss with just a little sugar if you like--DO NOT use enough sugar to candy, just a couple of teaspoons to bring up the sweet spices. We fight over these at our house.

Never in a million years would I guess I would LIKE to eat sweet potatoes, but then I had never had them any way except candied with marshmallows until just this year.

Whole, raw, unpeeled sweet potatoes will keep out on the counter for a while too, or at least they do at our house.

 
Sweet potato bread, dog treats, etc.

I have to recipes, I'll try to find them and post them.

Also, sweet potato biscuits, sweet potato cake, sweet potato cupcakes.

If you have dogs, slice them fairly thin and just dry out in the oven. They make great treats and a lot cheaper than the sweet potato treats in the pet stores. They are really good for them too. Our dogs REALLY love them and I also make them out of butternut squash.

 
Chipotle and sweet potatoes...

are a smashing combination! Here's a basic recipe that has converted many sweet 'tater haters!

Chipotle Smashed Sweet Potatoes
Adapted from Alton Brown

2 large sweet potatoes, peeled and cubed
2 tablespoons unsalted butter
1 whole canned chipotle pepper in adobo sauce, chopped
1 teaspoon adobo sauce from can of peppers
1/2 teaspoon salt

Directions

Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket.

Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.

I haven't made this one, and I don't know who posted it, but I have had the commercial sweet potato fries with garlic and rosemary and they were very good.

ROSEMARY-ROASTED SWEET-POTATO WEDGES

9 medium sweet potatoes (about 1 pound total)
3/8 cup unsalted butter
1 tablespoon minced fresh rosemary leaves (I
tripled this amount and more..we love
rosemary).

Preheat oven to 400°. Cut potatoes lengthwise into 3/4" thick slices. In a large shallow baking pan heat butter in oven 2 minutes, or until melted. Add potatoes, tossing to coat, and sprinkle with rosemary and salt and pepper to taste. Roast potatoes in middle of oven, gently tossing with a metal spatula halfway through roasting time, 20 minutes total, or until tender.

THANKSGIVING SWEET POTATO CASSEROLE

1 1/2 pounds russet potatoes -- peeled, cut into
2-inch pieces
1 1/4 pounds sweet potatoes -- peeled, cut into
2-inch pieces
1/2 cup milk
2 tablespoons butter -- (1/4 stick)
3 ounces cream cheese -- softened
1 cup sour cream
1 generous teaspoon minced fresh rosemary
or 1/2 teaspoon
dried

Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil. Cook sweet potatoes, white potatoes, and garlic cloves, in a large pot of boiling salted water until tender, about 25 minutes. Drain, reserving 1 cup cooking liquid. Return all potatoes to same pot. Add milk, butter, cream cheese,sour cream, and rosemary to the potatoes. Mash until smooth and fluffy, adding enough reserved cooking liquid to thin to a loose fluffy consistency. Season with salt and pepper. Spoon potatoes into prepared dish. (Can be made up to 12 hours ahead of cooking time.) Preheat oven to 350 deg. F. Bake potatoes uncovered until heated through
and golden on top, about 45 minutes. Makes 6 Servings

I have made this with pumpkin and carrots and they both were delicious. I skip the peanut butter and sesame oil and add cilatro when I puree it with a stick blender.

Thai Pumpkin Bisque

Amount Measure Ingredient -- Preparation Method1 medium onion -- chopped
1 celery ribs -- chopped
1 clove garlic -- chopped
1 teaspoon olive oil
32 ounces pumpkin
3/4 inch piece fresh ginger root -- peeled and sliced
1 teaspoon red pepper flakes
3 cups vegetable broth
1 1/2 tablespoons soy sauce
1 1/2 tablespoons peanut butter -- creamy
1 teaspoon sesame oil
1 can coconut milk -- unsweetened
1 bunch fresh cilantro leaves -- chopped

In a large heavy saucepan cook onion, celery, and garlic in oil over moderately low heat, stirring, until onion is softened. Add carrots, gingerroot, red pepper flakes, and broth and simmer, covered, until carrots are very tender, about 45 minutes. Stir in remaining ingredients and in a blender purée mixture in batches (use caution when blending hot liquids). Add chopped cilantro leaves. Return soup to pan and heat over low heat until hot, being careful not to let boil. Makes 6 cups

Rec: Grilled Sweet Potato Wedges. These are nice.

Grilled Sweet Potato Wedges

3 sweet potatoes, cooked through, cut into wedges
Canola oil, for brushing
1 tablespoon Bobby Flay Poultry Rub
Kosher salt and black pepper
1/4 cup maple syrup
2 to 3 tablespoons Dijon mustard

Brush the potato wedges with oil and season with rub, salt and pepper. Grill, turning once, until nicely marked.

Whisk the syrup with the mustard. Brush the potatoes with the glaze and turn a few times to caramelize.


Pat's notes: Delicious on the grill. Will try them in the oven next time.

MAKE THESE...They are fantastic! The poultry rub recipe is also known as "16 Spice Rub for Poultry". You can buy it pre-made or find this recipe (below on Bobby's website (www . bobbyflay . com. I always have a batch on hand and use it for several recipes. If you aren't a fennel lover, just leave it out for a 15 spice rub :!

16 Spice Rub For Poultry

3 tablespoons ancho chile powder
3 tablespoons pasilla chile powder
3 tablespoons ground cumin
3 tablespoons ground coriander
3 tablespoons ground ginger
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon allspice
1 tablespoon cinnamon
1 tablespoon ground cloves
1 tablespoon ground fennel seed
1 teaspoon chile de arbol
3 tablespoon brown sugar
2 tablespoons kosher salt
2 tablespoons coarsely ground black pepper
1 teaspoon cayenne pepper
Whisk together all spices in a bowl.

I did these in the oven because my grill was crowded. 20-25 minutes on 400 in just the canola oil, poultry seasoning, and salt/pepper, then took them out to do the maple syrup/dijon glaze for another 5 minutes. Heaven!

And these Baked Sweet Potato Wedges are good too. Not sweet.

Baked Sweet Potato Wedges

1/2 cup, plus 2 tablespoons butter
1 1/2 teaspoons ground cinnamon
4 sweet potatoes, scrubbed and cut lengthwise into wedges
2 teaspoons salt
2 teaspoons freshly ground black pepper
Directions
Preheat the oven to 400 degrees F.

In a large saucepan over medium-high heat, melt the butter. Remove the pot from the heat and stir in the cinnamon. Add the potato wedges to the butter and toss to combine. Season the potatoes with the salt and pepper.

Spread the potatoes in an even layer on a baking sheet. Roast the potatoes, stirring occasionally, until tender, about 20 to 25 minutes. Remove from the oven to a serving dish and serve.

Roasted Spiced Sweet Potatoes

These supremely easy, wonderfully spicy potatoes are delicious with Panfried Pork Chops with Pomegranate and Fennel Salsa.

1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon dried hot red pepper flakes
1 teaspoon kosher salt
2 lb medium sweet potatoes
3 tablespoons vegetable oil

Preheat oven to 425°F.

Coarsely grind coriander, fennel, oregano, and red pepper flakes in an electric coffee/spice grinder or with a mortar and pestle. Stir together spices and salt.

Cut potatoes lengthwise into 1-inch wedges.

Toss wedges with oil and spices in a large roasting pan and roast in middle of oven 20 minutes. Turn wedges over with a spatula and roast until tender and slightly golden, 15 to 20 minutes more.

Pat's notes: I actually liked these cut a bit thinner than called for.

Spicy roasted with chili powder, cumin powder, garlic powder, onion powder, salt and pepper, and

extra virgin olive oil. Can add a squeeze of lemon or lime juice when done.

 
Hmmm.... I do have some curry powder from Penzey's.... sounds like something to try...
