My next door neighbor loves to make applesauce and we frequently get containers full. It's got cinnamon in it and usually none or just a little sugar depending on how tart the apples were. It's mostly smooth but there's some chunks in it too.

I haven't been able to keep up -- so I now have some in the fridge and more in the freezer.

I know I can use it as a replacement for oil in baked goods, but I'd rather something that tastes "applely".

Anyone have anything interesting?

Easy Baked Oatmeal

We just finished making applesauce, too, and will be making this tomorrow. I've been making it since discovering the recipe on Gail's - don't remember who submitted it. You can cut the baked oatmeal in squares and serve with milk or maple syrup poured over. I refrigerate the leftovers and microwave squares for quick breakfasts for a couple more days.

An easy to make delicious tasting breakfast food that will please many a picky eater.
3 eggs
2/3 cup applesauce
1 1/2 cups brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
4 cups oatmeal
1 1/2 cups milk

4 servings
40 minutes 10 mins prep


1. Mix together all ingredients.
2. Place into a 9 x 13 pan.
3. Bake at 350 degrees for 20 to 30 minutes.

notes:
Add cut up apple and dried cherries.
Drizzle with maple syrup.
I usually cut the brown sugar to 1/2 cup which is sweet enough for us.

 
This is a very good, low fat quick bread I made years ago: Apple Nut Bread

APPLE NUT BREAD

Yield: 12 servings

Ingredients:
2 cups all-purpose flour
3/4 cup sugar
1 Tbsp. baking powder
1/2 Tbsp. (1 1/2 tsp) baking soda
1/2 Tbsp. (1 1/2 tsp) ground cinnamon
1 egg
2 Tbsp. oil
1 cup applesauce (I use unsweetened)
1 cup chopped nuts

Instructions:
Preheat oven to 350 F.
Combine dry ingredients in a large bowl. Add egg, oil and applesauce and blend well. Add nuts. Pour batter into greased 5 x 9" loaf or 12-cup muffin pan. Bake 45 minutes. Test with toothpick.

ORANGE OATMEAL APPLESAUCE BREAD

From the poster: "...I use homemade applesauce when I make this bread but store-bought is fine. Just make sure that it's unsweetened or your bread will be too sweet. The original recipe calls for 1/2 cup of chopped dried apples to be added but you don't need them. I've been wanting to try the bread with dried apricots but haven't had the chance..."

INGREDIENTS:

1-1/4 cups all purpose flour
1 cup quick-cooking rolled oats
1/2 cup firmly-packed brown sugar
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp. orange zest (poster's addition)
1-1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1-1/4 cups applesauce, unsweetened
1/3 cup vegetable oil
2 large eggs
1/3 cup buttermilk

Topping:
1/3 cup pecans
4 tbsp. brown sugar
1/4 tsp. cinnamon
1 tsp. orange zest (poster's addition)

DIRECTIONS:

Grease a 9 x 5-inch loaf pan and set aside. Preheat the oven to 350 degrees F.

In a bowl, combine all the dry ingredients (flour, rolled oats, brown sugar, cinnamon, nutmeg, orange zest, baking powder, baking soda and salt).

In another bowl, mix all the wet ingredients (applesauce, oil, eggs and buttermilk).

Add the wet ingredients to the dry ingredients and mix until just combined. Don't over mix. Let the batter sit while you make the crumb filling and topping.

By hand or in a food processor, chop the pecans until they are very fine. Add the brown sugar, cinnamon and orange zest and mix well.

Spread half the batter in your prepared pan. Sprinkle half the crumb topping over the batter. Spread the remaining batter over the crumb topping and finish the cake by sprinkling the rest of the crumb topping over the batter.

Bake the bread for 55 minutes and check for doneness by inserting a cake tester or toothpick in the centre of the bread. If it comes out clean, the bread is done. If not, bake for an additional 5 minutes and test again. In my oven this cake took 55 minutes.

Gold Medal Recipe - "Applesauce Oatmeal Cake w/Broiled Coconut Topping

Applesauce Oatmeal Cake with Broiled Coconut Topping

Makes 9 servings

1-1/4 cups applesauce
1 cup old fashioned oats

1/2 cup butter or margarine, softened
1 cup sugar
1 teaspoon vanilla
2 eggs
1-1/2 cups Gold Medal all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Broiled Coconut Topping (follows)

Heat applesauce to boiling in 1-quart saucepan over medium-high heat. Stir in oats. Let stand 20 minutes.

Heat oven to 350 Degrees F. Grease bottom and sides of square
pan, 9 x 9 x 2-inches, with shortening. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, salt, cinnamon and nutmeg, scraping bowl once, just until blended. Pour into pan.

Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Meanwhile, make Broiled Coconut Topping. Spread over hot cake.

Set oven control to broil. Broil cake with top 6 inches from heat 1 to 2 minutes or until top is golden and bubbly. Cool 30 minutes. Serve warm.

Broiled Coconut Topping

3/4 cup flaked coconut
1/2 cup packed brown sugar
1/3 cup chopped pecans or walnuts
1/4 cup butter or margarine, melted
3 tablespoons milk

Mix all ingredients in small bowl.
