ISO: ISO recipes using sweet, white wine.

I opened a bottle of sweet, white wine last night thinking I needed it for a chicken recipe, and then discovered my recipe called for a dry red. (I really should get on that whole learning to read thing...it would save a lot of trouble!)

Anyway, so now I have this open bottle of wine that I probably won't drink (too sweet for me). Does anyone have any recipes that call for this as an ingredient?

REC: Fresh Rhubarb Sorbet...

Fresh Rhubarb Sorbet

1 3/4 pounds rhubarb -- cleaned and trimmed
3/4 cup sugar
2 tablespoons sugar
1 1/2 cups dessert wine -- chilled


Cut rhubarb into 1 1/2-inch pieces. Place in a large shallow oblong ceramic or glass baking dish. Sprinkle sugar over top and bake for about 25 minutes or until soft. Set aside to cool. In food processor or blender, puree rhubarb with its liquid. Refrigerate puree to chill. Combine wine with puree and freeze according to ice cream manufacturer's instructions.

 
Ohhh, if it is a good one it will go well with foie gras.....

either sauted (with and onion marmalade) or a terrine.

I just bought a whole 'entier' for only $33.00 can't believe it was such a good price.

 
I throw it into sliced strawberries with a little sugar and splash of vanilla -- mascerate 30 min.

Then I fold it into crepes with a glob of whipped cream. Or, serve over ice cream.

 
Me too...Have you tried any of the Bouchon recipes? My cookbook group cooked from that book & I

loved it! Some of the recipes in there are my absolute favorites. The guy has a gift, for sure.

 
Thanks, all! I think I will do all of these and use up that bottle.

I'm making Cioppini (a tomato-based fish stew) for dinner tonight so I will make one of these for dessert. I'll let you know how the Cioppini turns out.
