and came up with many links to recipes.

Since you did not say exactly what you were looking for in the fruitcake (other than refrigerator-ness), maybe one of these would fit the bill?

Lots of these recipes look fairly similar: nuts and glaceed fruit, crumbs (ritz crackers, graham cracker crumbs, vanilla wafers--or cake crumbs!), all bound by sweetened condensed milk and/or marshmallows, with some other minor variations. Is the the type of cake you were looking for?

"Refrigerator" is there because . . .

you mix all the stuff together and them pat it in a pan of some sort and store it in the fridges. I would call this more of a candy than a cake, but it is a big, wide world of cooking out there!

Mistral, thanks for the reply and the link. As a child, I remember a neighbor’s grandmother making a fruit cake (without any colored fruit) that was kept in the refrigerator. It was very rich and a small piece was all you needed. I am fairly sure it had fruit in it and sweetened condensed milk, but I was very young and can’t remember much more than I loved it. Unfortunately, all of the family is gone now and I have no way to chase it down other than to start experimenting. I remember the color was a tan—not dark, no colored fruit.

 
It sounds like it could be some of those fridge fruitcakes I read. . .

They would be tan from the crumbs.

I remember those, I think they were called No-Bake Fruit Cake and were made with sweetened

condensed milk and graham cracker crumbs. I think the usual fruit was raisins and dates, but I supposed it could vary, probably maraschino cherries, too. Very popular in the fifties. If you look for a recipe for no-bake fruit cake you will probably find something similar. I'll check my oldest cookbooks.
