Hi Richard:

Do you think I could halve this recipe? It makes 8 servings. If not, is there any way to freeze left-overs?

I will be cooking only for myself this holiday, but I don't want to NOT cook. I will have all day, after all - and there's nothing better to me than cooking all day, so I don't want to skimp. But everything is for 8-10 servings and I am afraid I will be overwhelmed.

Any insight would be helpful. Thanks as always.

 
Mags, It can definitely be made ahead. I assemble on wed and cook on Thurs.

I know pms are not working, please send me an email. I recall you did a BIG appetizer party for your friends in Atlanta... Was curious about recipe changes / etc. I am thining of doing the same for our neighbors this year.

my $.002 worth...

I would not make it ahead. However, assembling then baking would be fine. Reheated, it's a pale comparision of its fluffly golden caramelized wondrousness,. And yes totally half it, its very forgiving.
