ISO: ISO Rick Bayless' Southwest Caesar dressing thickened with feta

a friend was telling me about it today and I don't have his home phone and it's unlisted. I am dying to try it - he said it was something like 4 limes, cilantro, 3 cloves of garlic and then it's thickened with feta.

When I get it from him next week, I'll share it...

He's a great cook but his wife was diagnosed with something and can't have any animal protien now so he said this was about the most exciting thing he's discovered. He said that feta is blended in at the end to thicken it and it's a perfect balance of flavors. That's why I am dying to try it.
