ISO: ISO rotisserie info - any general tips, and what cut of beef would you try for a maiden voyage?

I have yet to try my rostisserie attachment for our gas grill that I received for Christmas.

Any tips for a newbie?

DH wants to do beef for the first go round - what would you suggest? I thought tenderloin, but it is spendy and I'm afraid to ruin it since I don't have a clue of what I am doing.

Tri-tip? I am open to any and all suggestions.

Thanks!

I'd check with your local meat shop for a good cut of beef to rotisserie

for our first time, I did a chicken. Stuffed with herbs, lemon, onions, and a soy based marinade on the skin. Tri-tips are great, Sirloin Tip roasts are great, pork roasts work well. The whole chicken is forgiving and we needed to see how the heat worked, etc. If your hubby has to have beef, try a marinated tri- tip.

I usually buy a bottom round roast and have the butcher tie it up with

fat. It keeps the meat moist and the whole roast is tender enough to cut with a fork.
Did an eye of round once and it's much too lean.

chuck roast has a great taste and has the fat built in...

you might want it tied.

Hi Lisa...

tri-tip is great on the rotisserie. I have done it many times and it is wonderful and juicy. Because of the shape, you get rare and medium off the same cut, which makes this household happy. Other than poultry, that is the only cut of beef I have done. Pork loins are also very good on the rote. I cannot get tri-tip here, they have different cuts in different regions of hte country. I used to buy the tri-tips when they were on sale, and use them then. Good luck!

hey dawn. have you asked your butcher if she can...

cut a tri-tip from the bottom sirloin for you?

I agree! I put Mimi's sticky chicken spice rub on chicken pieces and grilled them. Now my step-dad

doesn't want me to fix anything else when they come for dinner.

Thank you all for the great tips, we'll go see what looks good at the meat counter.

I wish we had a "real" butcher shop for occassions like this.

Lisa, this real butcher is not TOO far out of your way: A1 Groceries in San Pedro

I think I've mentioned them before, an Italian deli and butcher shop. I make regular pilgrimages across the bridge for their cheeses, salamis and meats. It doesn't look like much, but it's a local treasure.

Thanks for reminding me! I still haven't made it down there, a friend also raves

about it for Italian schtuff.

Were you melting earlier in the week? I was in your neighborhood both Monday and Tuesday - man oh man was it hot!

Yes, it was hot! Those cool ocean breezes of yours evaporate around Crenshaw....

On Sunday my nephew got married at an outdoor ceremony in Newport Beach--and the only suit I own is wool. On Monday I had committed to having lingering wedding visitors over for a barbecue, so I was getting roasted from both directions! Lol, when it finally cooled off Tuesday evening I slept for 11 hours.
