(at 1810.4). I made them tonight and could not stop eating them! Why did I even bother to run--before baking cookies, dumb idea! The cocoa nibs give a suprising little crunchy treat in each bite.

Can't wait till tomorrow to see what the texture will be like. I find oatmeal cookies very chameleon-like, fresh baked they're soft and chewy, next day they are crunchy, next day soft again. Have not yet figured out the variables that make this happen. I am assuming that humidity and storage are factors.....In any case, oatmeal cookies reign supreme in my book! Thanks for a great recipe.

those cookies are relatively high in sugar, sugar continues to react to moisture in the air (draw moisture), so they seem to soften over time. As the moisture evaporates, they become firmer again. I make my dough, roll it into a log, and store it double-wrapped in the freezer... I like to slice & bake just a couple cookies at a time and eat them hot & crispy right from the oven. I'm a crispy fanatic. And honestly, I can't imagine a better cookie to go running for... *G*
