so good. I tried not to eat the bread (OK, I had 2 slices) and so scooped it up on celery sticks, everyone loved the crostini, nothing left...I'm going to make it again and use it to sauce chicken. I love flavours like this.

Sorry about leading you astray - lol - but glad you enjoyed the crostini.

Never thought about putting the spread on chicken...hmmmmmmm...got me thinking I might like this too!

 
OHHHH! YUMMY, I took the Chicken Morengo recipe, the one posted here recently and...

'cause I'm ultra lazy (mid-week) did it all in one step. I browned the chicken (I used a box of whole chicken legs)and softend the onions and added everything and then topped it with about 3 TBL of the roasted red pepper/eggplant mix. Topped it all off with mushrooms and olives and lemon juice and set the cast iron potjie (Dutch Oven I think it is sometimes called) in the oven.
Added the jigger of brandy just before eating and boy was this a "please sir can I have some more" meal. Not even enough sauce left to give the dog some juice, poor mutt lost out.
There are some dishes that are A1 for comfort meals.

Who says we can't have it all?! Very creative - now you'll need to find a name
