can't come up with a sandwich idea to serve with either soup for a lunch with guests this Sunday. I've searched our menu forum, and googled, but I'm stumped on what would be a good choice. Many thanks for your ideas.

This would be good with the crab...Goat Cheese, Green Apple and Horseradish Panini

change the bread.

Goat Cheese, Green Apple and Horseradish Panini

BASIC-EASYFASTVEGETARIAN
8 slices of pecan-cranberry or walnut-raisin bread
4 ounces fresh goat cheese
1 Granny Smith apple, thinly sliced
1 tablespoon freshly grated or drained bottled horseradish
2 tablespoons unsalted butter, softened

Preheat a panini press or a grill pan. Spread the bread slices with the goat cheese. Top half of the bread with the apple slices and horseradish. Close the sandwiches and butter the outsides.
Press the sandwiches until the bread is toasted and the cheese is warm, about 5 minutes. Alternatively, set the sandwiches on the grill pan, cover and grill over moderate heat, turning once, about 5 minutes. Cut the sandwiches in half, transfer to plates and serve right away.

I had lunch today at an upscale restaurant and they serve ...

A 3-cheese grilled cheese on Texas toast with cups of roasted tomato basil soup for dipping. YU-UM!!!

What about this with the onion soup: Grilled Corned Beef and Fontina Sandwiches (more)

I like the idea of adding something for contrast on this sandwich since the flavor profile mirrors the soup. What about topping the sandwich with pickled onions or arugula? Something makes me think the arugula--dressed lightly in Italian dressing--would be good. Pastrami would be a good alternative to the corned beef too.
