Have you thought of using other grains like Israelli couscous, Faro, wheat berries, etc.? Even Orzo is easy and you can cook ahead of time. I like to serve them cold with fresh garden tomatoes, cukes, olives and feta cheese. This keeps a few days in the refer, even with a lemon vinaigrette mixed in. You can also add some green onion.
