recipe but can't find it. Also wondered if there are any spreads (maybe cheese type) that would last for a few days at room temp.

And, finally, I know he really likes Italian wine cookies (the ones made with red wine) so I'm looking for a good recipe for those, too.

Sorry if this doesn't sound too coherent but I've been up for the last 19 hours.

REC: Mixed Nuts with Rosemary ...

Mixed Nuts with Rosemary

Yield: 10 servings

3 tablespoons unsalted butter
1 tablespoon dried crumbled rosemary
1 1/2 teaspoons salt
1/2 teaspoon cayenne, or to taste
3 cups mixed nuts (pecans, cashews, and hazelnuts)

Preheat oven to 350 degrees F.
Melt butter with dried rosemary, salt, and cayenne. Pour this mixture over 3 cups mixed nuts, tossing to coat them. Bake the nuts on a cookie sheet for 10 minutes, stirring occasionally.

Spiced Nuts

Makes 2 1/2 cups
When the egg white has been properly beaten,
no clear liquid will remain on the bottom of
the bowl.

1 large egg white
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground allspice
1/2 teaspoon ground cumin
1 3/4 teaspoons cayenne pepper
2 1/2 cups pecan halves or assorted nuts,
such as cashews, walnuts, or almonds

1. Preheat oven to 300°. Beat egg white
until soft and foamy. Combine all remaining
ingredients except pecans; whisk into egg
white. Stir in pecans until well coated;
spread mixture in single layer onto an
ungreased baking pan.

2. Bake pecans for 15 minutes, then
remove from oven. Using a metal spatula,
toss, stir, and separate nuts. Reduce oven
to 250°, and return nuts to bake until
medium brown, about 10 minutes. Remove from
oven; toss, and stir again. Place baking pan
on wire rack to cool (they will crisp as
they cool). Break up any that stick
together; store in an airtight container, at
room temperature, up to 2 weeks.

 
These are the best! I ALWAYS have a container of these in the pantry....

They go on my salad everyday and often are sprinkled on soups such as butternut squash and of course they are great just out of hand! My cayanne must be really strong, I had to go down to 3/4 t so the nuts wouldn't be too hot for me.

 
Here is one i have been meaning to try

Spiced Pecans

1 cup pecans, chopped
½ tablespoon butter
½ tablespoon tupelo honey
¼ teaspoon cayenne pepper
¼ teaspoon sea salt


Heat a medium skillet over medium heat. Add all the ingredients and cook until the pecans are lightly brown and caramelized, about 8 to 10 minutes. Remove from heat, cool, and store in an airtight container.

Yield: about 1 cup

 
Union Square Cafe Bar Nuts

This recipe has been around for ages but it never fails to please. I usually keep some in the freezer and just warm before serving.

Amount Measure Ingredient -- Preparation Method

1 1/4 Pounds Assorted Nuts
2 Tablespoons Fresh Rosemary -- Coarsely Chopped
1 Teaspoon Cayenne
2 Teaspoons Dark Brown Sugar
2 Teaspoons Kosher Salt
1 Tablespoon Butter -- Melted

1. Preheat the oven to 350 °

2. Toss the nuts in a large bowl to combine and spread them out on a cookiesheet. Toast in the oven until they become light golden brown, about 10 minutes.

3. In the large bowl, combine the rosemary, cayenne, brown sugar, salt, and melted butter.

4. Thoroughly toss the warm toasted nuts with the spiced butter and serve warm.

Yields: 5 cups


NOTES : These nuts won The New York Press award for "best bar nuts in NewYork." Every afternoon at about 4:45, a piping hot batch emerges from their ovens and is sent out to the bar, where the sweet rosemary fragrance wafts throughout the restaurant. These nuts would probably be a hit in your living room accompanied by a football game and some ice-cold beer.
