ISO: ISO something to do with frozen crawfish tails....

I love fresh hot boiled crawfish so a coworker brought me about 20-25 pounds. I ate until I nearly burst and froze the remainder. Every time I open the freezer they are staring at me screaming to be made into something wonderful. The typical cajun dishes are okay but I want something to make the crawfish tails shine. Any ideas or recipes?

I remember eating crawfish pie in New Orleans the last time I went to jazz fest. Sorry I don't have a recipe. I googled crawfish pie and saw quite a few recipes. The pies we had were delicious.

 
I love crawfish etouffe or gumbo, but since you don't want a typical Cajun dish, here are a few

unusual dishes using crawfish. (not T&T).

I made pasta with about 1/2 of them so I still have about a pound left and another friend has his big crawfish boil next weekend. Once they get drunk, they stop eating and he winds up with leftovers. One year he wasted a whole 40# bag.

One of my favorite restaurants here makes a crawfish and spinach enchilda that is to die for and I forgot about that recipe until I saw these.

Chef John Folse is awesome - I have his site bookmarked and should have thought about going there.
