I would like to get my daughter one of these bowls for Christmas but am out of my depth here. She says it must be a rattan type just for sourdough otherwise it will stick and not rise. Any suggestions for brands?

 
No need to use rattan...

I used just regular reed baskets, lined with floured cotton tea towels.

Thank you for your post. Up to now my daughter has been putting a tea towel in a bowl and that has worked fairly well. She says she has to be extremely careful though, because if it sticks at all it won't rise properly. What's the advantage to using a rattan basket, and is there one in particular that works over another?

The only reason I got mine was so I could get those flour circles on my bread.

I actually like using my mixing bowls better because if you use a smaller mixing bowl when proofing it You can get a higher a.k.a. taller loaf out of a really wet dough. I just sprayed them with coconut oil I get from Trader Joe’s so the dough doesn’t stick. However, none of that makes for a Christmas gift. I was always going to try ordering from the folks At the link because of the great pricing. (I just got mine off of eBay.)

If you want to get her something to go with, may I suggest this flour?

This is a great flour and I’ve been using it for over a year now. I know they use it at Acme bakery in Berkeley as I saw it when I was there and I’m pretty sure they also use it at Tartine in San Francisco.

The local bakeries group talked Cosco into carrying it but they no longer do so, I’m ordering directly from the source this week as I just ran out. It’s a very lovely flour to make sourdough.

The basket material allows some air flow

so that the dough doesn't get too moist to release from the towel or form.
The coiled rattan or bamboo baskets impart a pattern onto the dough. If your basket is a loose weave, you may get the same from it.

I will look in my storage area and see if I still have the baskets (I also had a rattan form) and if I do and you are interested, I can send them to you.

 
Or if not baking flour to gift with the basket how about rice flour for dusting the basket?

It’s best that you just baskets with rice flour than regular flour because it has a higher burning point and won’t brown in the oven.
