ISO: ISO: South Beach treat help. I plan on bringing in warm cinnamon rolls

tomorrow using the bread machine sweet dough I tested over Christmas. The only problem is a coworker started South Beach a few weeks ago and he's doing really well. He should be on Phase 2 but is continuing Phase 1 for another week so his wife can catch up to him. Then they'll be in sync.

Since I know this cinnamon roll thing will kill him, what can I make that he can enjoy? He spent 5 minutes in my cubicle last week apologizing for not having a slice of the "Sweet" Golden Butter cake I made for a retiree. That's when I found out he was on South Beach.

Cinnamon rolls are what the other 24 coworkers want, so I'm going forward with that. I've never done South Beach, but I can follow any recipe.

I recall a veggie quiche and a frittata rec were suggested in phase 1. I will look for my book.

Agree w/ Mo.... Very, very kind of you to give consideration to your collegues diet.

 
Thanks Mo and barb. I probably won't do the muffin because that would mean buying soy flour. I

can probably swing the quiche...i guess it's crustless?

 
Rec: Vegetable Quiche Cups to Go......

This is "Go to" breakfast for SB, phase 1...

Vegetable Quiche Cups To Go
Serves 6

Ingredients
1 package (10 ounces) frozen chopped spinach
3⁄4 cup liquid egg substitute
3⁄4 cup shredded reduced-fat cheese
1⁄4 cup diced green bell peppers
1⁄4 cup diced onions
3 drops hot-pepper sauce (optional)

Instructions
Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.
Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.

Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350°F for 20 minutes, until a knife inserted in the center comes out clean.

Quiche cups can be frozen and reheated in the microwave. Any combination of appropriate vegetables and reduced-fat cheeses may be used.

As a very seasoned South Beach dieter may I make a suggestion?

You guys probably won't like this but it is how I lost 97 lbs in 9 mo many years ago.

I myself am on Phase I (have done it a lot over the years) right now. It is the strictest phase of course. I gained some weight back and now it is going away.

A person staying on Phase 1 is interested in losing as much as possible in a short time and if he is really following it, there is really no room for a work treat unless you'd like to bring in a celery stick filled with Laughing Cow Lite cheese- LOL.

Tomorrow there is a big pizza party at work and I won't have any of it but I don't feel at all bad and would NOT want someone to fix something just for me that they think I would like. I wouldn't eat it even though the thought is nice.

Being on a diet is a choice.

 
And if you make something else, others will feel uncomfortable.

I totally agree with Cathy. Make the sweet rolls only. And let everyone enjoy them.

Update: I made the cinnamon rolls last night, refrigerated unbaked, and baked this morning.

All in an utterly fruitless attempt to bring in warm cinnamon rolls this morning since it was going to be "cold" here.

I realize "cold" is relative...we have no snow on the ground, but we did have to scrap ice off the vanpool windows this morning (and remember: our winter boots are flip-flops). And then my beautifully golden warm cinnamon rolls sat in a FREEZING COLD VAN for a 70-minute drive. Even with the heat on, the floor of the van was cold. So right now they are hard and cold and a bit too sweet for my personal taste.

Geoff (South Beach dieter) saw the cinnamon rolls as soon as he walked past my office. I had his "option" ready to be baked: yogurt/egg/flax seed/cinnamon/baking powder if he wanted it. He proudly told me he was down 17 pounds after three weeks (he's 6'6" and big), was starting Phase II today and chose NOT to have the substitute or a cinnamon roll.

I'm going to make up the SB treat anyway just so I can taste it.

Cathy, I shared with Geoff how well you and Richard and Melissa and so many others

have done going low-carb.

He's 6'6" and when I mentioned how tall you were, he wanted to know where YOU were at when he was dating.

(Not that he doesn't love his petite wife....)

Make a "hot box", Marilyn- weren't you a Girl Scout?

When catering I used to make both hot and cold boxes in cars or trucks- your rolls (covered in foil or whatever) could be swathed in big towels and that packet surrounded by crumpled paper in a trunk or in a box in the car then more towels over the top to hold in heat. It works great.
