I think they are called 'biscuits' but are actually crackers. I know they are some combination of butter, cheddar, flour, chopped pecans, and cayenne but I don't know the proportions. I think you mix them and then shape them in a log and refrigerate them for some time before you cut and bake.

My Southern grandma, when she was alive, always kept tins of these around her place during the holidays and they were fabulous nibbles.

This one uses different cheese and nuts

I could give you some proportions.

Blue Cheese Wafers

1 cup grated sharp cheddar cheese
1/2 cup softened butter
1/3 cup crumbled blue cheese
1+1/2 cups flour
1+1/2 tsp. seasoned salt
1/3 cup finely chopped walnuts

Mix cheese with butter. Add rest of ingredients. Shape into logs about 1+1/2 inches across. Chill. Slice about 1/4 inch thick. Arrange on ungreased baking sheet. Bake at 375 degrees F for about 10 minutes until firm. Makes about 6 dozen.

 
And this one doesn't have nuts.

Cheddar Cheese Crackers

2 cups grated sharp cheddar cheese
2 cups flour
1/2 cup butter, softened
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. cayenne pepper
1/2 cup water

Preheat oven to 425 degrees F.

Mix all ingredients and shape into rolls 1+1/2 inches in diameter. Wrap in waxed paper or parchment and chill for at least 2 hours. Cut into thin slices and place on ungreased baking sheet. Sprinkle with coarse salt. Press gently.

Bake for 5 minutes or until slightly browned. Makes 4 dozen.

Alternate toppings: brush with water & sprinkle with garlic salt, celery salt, or curry powder.
