Use any mushroom you can find. The taste will still be wonderful. More.....

You might consider buying dried shiitaki mushrooms to keep on hand. A little added to regular mushrooms enhances the flavour. I buy them in a large jar at Costco and they are quite economical.

 
I was going to suggest the same--buy them dried.I also think that the already sliced ones

are better than the dried whole ones.
