ISO: ISO T&T gluten free cookies or pizza to make for my cultural exchange partner (who I don't know)

I'm suppose to send a cultural exchange package with someone I've been teamed up with. I'd like to include something homemade, but found whatever I make needs to be gluten free.

I'm planning to make lemon curd from my own lemons (if they'd get ripe already) to represent my locality, but want to add something else too, but prefer T&T given some gluten free things aren't that tasty. I was going to buy a local bakery's famous cinnamon bread to add to the box till I found out they can't have gluten. I mention pizza too because in her bio she mentions how hard it was to give up pizza. I'm kinda stumped on what to make (or include in a cultural exchange package as a whole).

Ideas welcome!

 
MariaD, Over at Epicurious search for "Gluten-Free Pizza," it has very positive reviews.

 
Wow, that is a lot of unusual flours to buy...I suppose there are many other uses for them

and one would quickly learn, if gluten intolerant.
I never knew there were so many different flours, and other ingredients until I started paying attention to the abundant of gluten free recipes lately.
