Applesauce Oatmeal Cookies. I made these last weekend and they were a hit.

APPLE SAUCE OATMEAL COOKIES

INGREDIENTS
1 cup Apple Sauce( I used unsweetened)
1/4 cup shortening (I used 1/2 stick butter)
1 cup sugar(I used 1/2c white and 1/2c brown)
2 eggs
1 tsp vanilla(my addition)
1 3/4 cups flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 cup raisins(plumped in hot water)
1 cup rolled oats
DIRECTIONS

Preheat oven to 375° F.
Cream shortening and sugar and eggs and vanilla. Stir together flour, baking powder, baking soda, salt and spices. Stir in raisins and rolled oats. Add dry ingredients alternately with apple sauce to creamed mixture.
Chill in refrigerator at least one hour before baking.
Drop by teaspoonfuls onto greased baking sheet. Bake at 375° F for 12-15 minutes.
Makes 8-10 dozen two-inch cookies
Cooking time: 12 - 15 minutes

Note: I combined all the wet ingredients, including the applesauce, and then added the dry ingredients all at once. Chilled well and then made bigger cookies, so I had about 4 dozen. Original recipe called for 1/2c shortening and 1 egg.

 
Lowering the shortening amount and adding another egg makes these more cake-like, but very good.

I also made the chocolate chunk cookies that were posted awhile ago(contained broken pretzels, chocolate, peanuts--I think maybe it was posted on EPI), but the oatmeal cookies were everyone's favorite at the party I took them to.

 
I appreciate lowering shortening...I don't use it anymore. I read recently on the web

somewhere that eggs are what gives cake their crumbs....I was making a muffin recipe and kept adding eggs as I was doubling, quadrupling the recipe and wondered why they were so crumbly.
