A friend brought some back from France and it was oh-so-good. I'm not big on gingerbread because the ones I've eaten were soooo spicey and usually soooo hard - but this was different -- just the right amount of spice, the right texture for me.

I googled around and found a few recipes -- most really diverse from each other. Does anyone have a tried and true recipe?

Paris Commune In NYC...

...has what I find to be the quintessential gingerbread. They serve it right out of the oven dark as chocolate, moist, soft and steaming with a dusting of confectioner's sugar and a dollop of freshly whipped cream. YUM!!!

I too have been searching for a recipe to match that quality (I've asked for the recipe but they refused) smileys/frown.gif

This is one post I will be anxiously watching top see where it goes.
