A bakery back home in PA makes Anise Toast. It kinda looks like biscotti - it has the same shape but it's not as hard. It's hard to descibe the texture - crispy, easy to bite, very light in color, very anise-y in taste. I'm thinking the batter is more on the cakey side than cookie and maybe they don't bake again after slicing - or maybe they don't bake as long - because the cut sides are crispy but not browned. I know I can get the anise pow from anise oil instead of extract (oil is what I use for my cookies anyway).

So - anyone ever hear of these? and do you have a T&T recipe?

Italian Anise Toast I

Italian Anise Toast I
(This recipe is part of the Sicilian tradition of the St. Joseph Altar.)

2 1/2 cups cake flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or margarine
1 cup sugar
3 eggs
1 tablespoon anise extract

Sift flour with baking powder and salt three times and set aside. With mixer at medium speed, beat butter and sugar until light. Add eggs, one at a time, beating well. Add anise. At low speed, beat in flour mixture. Grease two cookie sheets. Divide mixture in half and spread each half on a cookie sheet measuring 11" X 5'. Preheat oven to 350° and bake for 15 to 20 minutes until pale golden brown. Remove from oven, cut into one-inch-thick slices, turn each on its side and bake 10 to 15 minutes or until lightly browned. Remove slices to wire rack and let cool.

Biscotti all' Anici (Anise Biscuits or Toast) II

2 eggs
2/3 cup sugar
1 cup flour
1 tsp. anise seeds

Preparation:

Place eggs and sugar in bowl and beat well 10 minutes. Add flour slowly, blending gently and thoroughly. Add anise seeds. Butter and flour a loaf pan (9"x 5"x 3"), pour in batter and bake in preheated oven 375 degrees for 20 minutes. Remove from pan (leave oven on), cut loat into 1" slices and place slices on buttered baking sheet. Return to oven. Brown slices on both sides for about 5 minutes on each side. Makes about 20 biscuits.
