The one I had from the bakery tasted exactly like a multilayer lemon bar, but in a thick, Lofthouse-type soft sugar cookie. No layers! The cookie was called Pink Lemonade and it had pink lemon frosting.

I've surfed the web and pulled up many different recipes to try but I wondered if one of my fellow swapsters had a T&T. Thanks, Colleen

 
Both were lemon flavored

The not-too-sweet lemon cookie "crust" and the creamy sweet-sour lemon frosting were perfection! Colleen

 
This one at Allrecipes sounds great - a reviewer says it's a soft cookie - just use pink lemonade

Lemonade Cookies

"Lemonade concentrate makes these simple cookies a tart treat!"

Ingredients:
1 cup butter
1 cup white sugar
2 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1 (6 ounce) can frozen lemonade
concentrate, thawed
2 tablespoons white sugar

Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.
2. In a large bowl, cream together butter and 1 cup sugar. Blend in eggs. In a medium bowl, sift together flour and baking soda; gradually beat into butter mixture, alternating with 1/2 cup lemonade concentrate. Drop mixture by rounded teaspoons onto the prepared cookie sheet.
3. Bake 8 to 10 minutes in the preheated oven, until lightly brown. Brush lightly with remaining lemonade, and sprinkle with remaining sugar.
