HI All

My brother asked if he could bring a gentleman (actually a refugee with a horrific story of escape:( that he is helping,

to our Thanksgiving dinner. He was a native of Uganda,

I wanted to make a dish that would remind him of home. Nothing too complicated, since I am full on T-Day, but...

I searched the site here, and Food.com, found some interesting choices, but thought I'd reach out to our community to see if anyone has a T&T, or a friend that might. TIA!! smileys/smile.gif

 
I'm not familiar myself with their cuisine, however I did find this site from a couple from there

interesting information, some you would not want to cook but others caught my eye such as the sweet potato. We can get those in our area and they are usually labeled as a Asian Potato. They area rosy burgundy color on the outside and white inside, and are very delicious. We bake them just like a regular potato and truffle butter is killer on them. They list other veggies and how they are prepared. Look over the list, it may inspire you. A type of soup might be a good option, as well, served as a first course in his honor.

We had Ugandan friends who had a big party every Christmas with all the mommas cooking while we

the guests, all ate, The biggest treat was their samosas. They made them right in front of us all and just could not keep up with the consumption.

 
How wonderful (you had me at "could not keep up with consumption"). What were the samosas

filled with? Just curious.
