ISO: ISO....veal bones for stock...

I'm going out of my mind trying to find a source for veal stock bones up here in N. California. I'm inland...smack dab in the middle between Reno and San Francisco. I've called every meat cutter I can find. I've begged restaurants (who are having as much trouble as I am). I've even tried ordering through 1) my grocery chain; 2) every meat cutter I talked to.

Does anyone have any suggestions? Please and thanks!!

 
Glennis, do you ever travel down to the S.F. bay area? I'm in the east bay,

30 miles east of SF and get my veal bones through two higher-end markets, either Diablo Foods market in Lafayette or Lunardi's market in Danville. The past 4 years the bones were actually free at Diablo but 6 months ago they started charging $3 to $3.49/lb, which I think is high though many of the bones are shank bones and still have some meat on them, so I cut off the meat and make veal stew with them before roasting the bones for stock. Lately I've been buying them at Lunardi's for $1 to $1.49/lb since it's alot better price than Diablo Foods. If you happen to travel this way you could pack a cooler in the car and call the markets ahead to have them hold some bones for you.

Or what about checking some higher end markets in the Sacramento

area...wouldn't be as much of a drive for you as to the SF bay area.

 
I know they're available in the SF area...I did find a couple meat...

processors or butchers that carry veal bones retail. Unfortunately, the minimum order is 60 pounds. We're acquainted with a chef in Fort Bragg that I've considered calling to see if I can buy from him. That's not a short trip either, but... I've got a couple l-o-n-g weekends coming up...3 days for MLK Jr. this month, and a 4 day stretch in February. Either would be good weekends to make a dash to the coast...either place. I think I found a place that had them in Berkeley too...Sacramento hasn't yielded up much yet. I've got some "feelers" out, but no bites there yet either. I'll stay in touch about this, because I'm GOING to make Veal Stock by golly gosh! LOL!
