ISO: ISO vinegar recipes -- thinking of making some as gifts

My sister and BIL claim they gained weight during my visit and both try to eat mostly vegetarian with a vegan/Joel Furhman, MD leaning, so I'm kind of at a loss. However, I was reading some of his recipes that call for some special vinegars, in fact he sells them, but I'd rather make some for gifting if I could.

So

Does anyone have homemade T&T vinegar recipes they'd care to share?

 
Very T&T Berry Vinegar REC

Maria, I make berry-flavored vinegar a couple times a year. I have experimented with lots of combos but really like straight raspberry or blackberry or the berry mixture found in the freezer section of Costco the best. It is really easy to make and a great gift. I usually triple or quadruple the batch and bottle it. No need to can it or refrigerate. I find it is really good if you let it sit for about a month before using. Make sure you push the berry residue in a chinois or other fine mesh strainer to get the berry essence out.

FLAVORED VINEGAR
Makes about 1 quart
3 cups white vinegar
2 Tbsp honey
12 to 16 oz frozen berries (unsweetened) raspberries, blueberries, blackberries, huckleberries, strawberries-your choice.

Combine all and bring to boil in a pan over high heat. Remove from heat and let stand, covered, until cool. Strain and discard residue.
