i have a nice spiral sliced ham in the freezer, to be removed to be thawed today. my stepdaughter is making some potato dish to go with it. she is also making some side dishes and appetizers. i have a craving for a bean salad of some sort and would also like to make some side dishes and appys too, leftovers are good and i have been leaning towards vegggies since i got home. i dont usually make spiral sliced hams, ant tricks or good glazes to use?

it turns out i have three broken teeth , a cavity(big whoop)my right jaw is either fractured or has severe arthritis (tmj) oh and a fractured skull. but, i am really doing very well. my family has been super, and my husband has really stepped up to the plate and has just been a sweet heart. my mother-in-law is coming out for a couple weeks next week sometim, and the my sisters after that. i found the body of my missing kitty that i fostered since he wa three weeks old. he was almost a year olg and was hit by a car. we buried him under the pine trees. and we are having our stanrd poodle, 13 years old, put to sleep this weekend, it's time. my stepdaughter will do it here at home.

amazingly i am doing okay. we are coloring eggs today and getting ready for the egg hunt tomorrow. there is a cadbury orange and chocolate egg with my name on it.

Thinking of you and parying for a speedy recovery! Here's a side dish that is tasty and easy

Glazed Dijon Carrots
1 16 ounce package baby carrots
1/2 cup water 3 tbsp. butter or margarine
2 tbsp. brown sugar
1 tbsp. Dijon mustard
1/2 tsp. ground ginger ( I use 1/4 tsp.)
1/4 tsp. salt
In saucepan bring water and carrots to boil. Reduce heat; cover and cook 10-12 minutes or until tender. Drain. Place carrots in a serving dish and keep warm. In the same pan melt butter. Add brown sugar, mustard, ginger and salt; cook and stir over medium heat until sugar is dissolved. Pour over carrots and toss to coat.

CATHY'S SPICY HAM GLAZE

1 C brown sugar
1 T Grey Poupon mustard (or more if needed)
1 tsp ground cloves
1 T cognac or brandy
Mix all; should be a heavy paste. Add more mustard if too thick. Add more brown sugar if too thin.
Coat ham and bake.
