I made prok ribs in the crockpot yesterday and when they were done they were not really as tender as I had expected, and were also stringy when I cut them (I cut them across the grain).
What did I do wrong? I don't ever remember ribs as being stringy before.
The recipe was 8 oz sauerkraut, 1/2 cup applesauce, 1 Tbsp brown sugar, 2 Tbs cider vinegar, and about 2 lbs boneless pork ribs (next time I'll used bone-in, that should help!).
I put them on high for about 6 hours (my mini-cp only had this one setting, or else I'd have cooked them longer, on low if that was an option) after letting them sit for about 20 minutes before serving them.
