ISO: ISO: What happens to a real buttercream in heat...

Hi there,

I'm writing a blog post about a cupcake with real buttercream frosting (sugar, eggs whites and butter) and I was getting to the part that it shouldn't be left out long in high heat. But then I couldn't really say "why"...Does it melt? Lose its shape?

Any insight would be appreciated!

The butter turns to oil and separates out. I did my own wedding cake

and used a similar frosting. Butter melts at very low temperature. The butter was melting out of the frosting in my hands in the pastry bag.
