ISO: ISO what to do with "tidbits" from a beef tenderloin

I usually make a beef stroganoff , but I wish to lighten things up a bit.

Any suggestions?

You can use it in stir-fries, just take care to not over cook it. Cook's Illustrated has a recipe

for beef stroganoff that is a lighter version, only a 1/3 cup of sour cream. It's a little more involved, but delicious and my go-to recipe now. If you're interested, I'll look it up.
