ISO: ISO - What's the best all round Asian Cookbook

The equivalent of Rick Bayless and Mexican cookery...Marcella Hazan and Italian cooking...

I want something that captures the essence of the people and their culture and transmits that into the food, that there are whys and wherefores and reasons it's done this way or that, and here they are. Any suggestions? You folks are the best resource I can think of! Thanks bunches in advance!!

 
For Southeast Asian I love "Hot, Sour, Salty, Sweet". I have several others but

they are mostly Thai and Vietnamese.
For Indian I would say any of the books by Madhur Jaffrey.
If you scroll down the amazon page, the same couple have a book on Chinese foods-Beyond the Great Wall-Chinese is one Asian Cuisine I have the least experience with. It is such a huge country it is almost many cuisines.
I met the couple who wrote Hot Sour Salty Sweet at a CIA Southeast Asian Food Course, Very passionate about their work.

I have a couple Chinese, Japanese, and Thai...

but not enough that takes me into the culture the way I'd like. This one looks like exactly what I'm looking for! Thanks so much Meryl!!

Is there a program for people who may have (ahem) too many cookbooks? Or is there such a thing, really? *giggle* Personally, I think it's just that my abilities and tastes have matured and I have no daughters to pass my earlier cookbooks off to!
