The baking chips don't work well because of the higher fat content and I can't seem to find the big bars anymore. The markets carry those little 4 oz. bars but I need 2 lbs. and that would be a pretty steep price.

Thanks all!

Our supermarkets have the Ghirardelli white choc in the baking section

Also, Fresh Market has the flat discs for chocolate making, but those are expensive as well. Sometimes they have large chunks, I think. Whole Foods here often has the white El Rey, which is very good and cheaper than the Callebaut.

Whole Foods has a bag of White Chocolate Chips that are pure and not TOO expensive.

It's what I've used since TJ's broke up with Ghiradelli a while back.

3 12-oz packages would give you 2#, + munchies, and cost around $11.

Reminder that white chocolate melts at a lower temp >> meaning it burns a lot quicker. Also

remember that a more powerful microwave (1100W versus 600W) will burn, baby burn chocolate so quickly your eyes will spin.

Also (can you tell I've been "burned" by this topic?) if you ARE going to melt via microwave, use a plastic microwavable container and NOT a glass container. Glass heats up quicker and hotter and BURNS YOUR CHOCOLATE in the time it takes to split an atom.

You're quite right. But I always use a heavy glass, nuke for short times and stir like crazy

I count on the heat from the glass to finish gently melting the chocolate and it works beautifully if are aware of that fact. Thanks!
