No a/c, energy zapped - what's your favorite no-cook or easy-cook evening meal? Even too sticky and uncomfortable to grill outside.

Egg salad on toast last night, running out of ideas here. We are setting heat records here in the East.

Just looking for ideas that might inspire me.

 
Mexican Shrimp Cocktail, Cold Cucumber/Dill Soup, Marinated tomato/feta salad

piled on crispy toasted rustic bread (garlic or not). Gazpacho if I can get really good tomatoes.

Hot weather meals can be imaginative, creative, light-yet-filling, easy and delicious. A friend experiencing the sweltering east coast heat just asked me this same thing last week...she wanted some ideas for delicious meals that don't heat up the kitchen too much, so I'm sharing here what I sent to her. She loves to cook so I know she'll be trying a number of these this summer.

Dawn, I know you asked for *favorites* but maybe some of these ideas will provide some inspiration for you. :eek:)

 
Spicy Shrimp Salad with Mango and Grapes, Sweet and Sour Coconut Vinaigrette

This does require a bit of cooking but the results are cool and refreshing even though you use chili paste and chilies.


SPICY SHRIMP SALAD WITH MANGO AND GRAPES, SWEET AND SOUR COCONUT VINAIGRETTE
(serves 20-25)

Sweet and Sour Coconut Vinaigrette:
2 cups coconut milk
8 tbsp oriental chili paste
4 tbsp brown sugar (packed)
8 tbsp fish sauce
8 tbsp lime juice

Bring coconut milk to a boil in a saucepan. Add the rest of the ingredients and stir for a few minutes to dissolve the sugar. Turn off heat and set aside to cool.

Garlic and shallots:
8 tbsp sliced garlic
8 tbsp sliced shallots
3/4 c vegetable oil

Saute the garlic and shallots in the oil until crispy. Remove from oil and set aside to dry.

Shrimp Salad:

4 Hayden or any other ripe Mangoes, peeled and sliced into chunks
12 cups halved green and black grapes (I used small whole grapes)
4 red chilies, finely diced (I used Thai peppers but any hot pepper will do)
about 70 cooked, shelled and deveined shrimp (I used 10-12/lb large shrimp)
1 cup chopped cilantro

Mix together all the salad ingredients and the sweet and sour coconut vinaigrette then toss with garlic, shallots and cilantro.

For serving: lettuce leaves and extra chopped Cilantro

 
Cold Chinese Chicken Salad

This is a real favorite at my house:

CHINESE CHICKEN SALAD
(serves 2)

4 cooked chicken half-breasts, chilled and shredded
1 head lettuce, torn into bite-sized pieces
6 green onions, chopped
1 can mandarin orange slices, drained
bunch Chinese parsley (Cilantro), chopped
1 package Wun Ton Chips

Dressing:
¼ C salad oil
¼ C sesame oil
4 T sugar
6 T seasoned rice vinegar
salt, pepper to taste
Blend dressing items. Mix together lettuce, green onions, mandarin oranges and Chinese parsley. Toss with dressing. Sprinkle Wun Ton Chips over top.

 
Not people food, but a local groomer makes doggie "ice cakes". She took a lil springform pan

added ingredients that her dog can eat. In this case, was peas and very diluted chicken broth, she mixed in a few lil doggie treats and dry dog food and froze the whole thing. Her big doggie was so appreciative!!

 
Tuna/White Bean Salad with celery, red bell pepper, sweet onion, peas, green beans, grape tomatoes,

corn, black olives, fresh herbs, etc., in a lemon/balsamic vinaigrette.

 
Chicken Souvlaki Salad

CHICKEN SOUVLAKI SALAD

Note: I added a little onion powder, garlic powder, and cumin powder to the marinade.
I preferred the chicken breasts left whole, rather than cut up and added to the salad, so I served them separately.

"The elements of a classic Greek salad and a chicken souvlaki sandwich combine in this piquant dish. You can also use lamb in place of the chicken."

INGREDIENTS:

2 teaspoons minced garlic (I used more)
1 teaspoon fresh lemon juice (I used about 2 tsp - 1 Tbsp)
1 teaspoon extra-virgin olive oil (I used about 2 tsp - 1 Tbsp)
1/2 teaspoon dried oregano
1/4 teaspoon salt (I used less)
1/4 teaspoon black pepper
1 pound skinless, boneless chicken breast

3 cups cubed peeled cucumber (about 3 cucumbers)
1/2 cup vertically sliced red onion
1/2 cup (2 ounces) crumbled feta cheese
2 tablespoons chopped pitted kalamata olives
2 ripe tomatoes, cored and cut into 1-inch pieces (about 1 pound)

1/2 cup plain fat-free yogurt
1/4 cup grated peeled cucumber
1 teaspoon white wine vinegar
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper

DIRECTIONS:

Preheat grill or broiler.

Combine garlic, lemon juice, olive oil, oregano, salt, pepper and chicken breast in a large ziptop plastic bag. Seal the bag and shake until coated. Remove chicken from the bag. Grill or broil the chicken 5 minutes on each side or until done. Cut chicken into 1-inch pieces.

Combine chicken, cubed cucumber, red onion, feta cheese, olives and tomatoes in a large bowl. Combine yogurt, grated cucumber, vinegar, garlic powder, salt and red and black peppers in a small bowl. Pour over chicken mixture and toss well.

Serve with pita bread wedges.

Makes 4 servings of 2 cups each.

Funny story...

I love to make salads using lots of grains and legumes. I soak them overnight, cook them, then combine then with the fresh tomatoes, herbs, and other summer produce from the garden. Never the same twice.

So I'm checking out at the market with all my bags of brown rice, quinoa, lentils, couscous, split peas, garbanzos, millet, etc. The lady in front of my looked over my purchases and rather smugly said, "looks like someone's making soup!"

I said, no, I'm actually making salads.

She just looked at me like I was from Mars.

People can be so funny. You would think she said it as a conversation starter, then would ask

about your salads / recipes. Could have been worse... You could have replied that you were not making soup, but rather, trying a new recipe for cupcake surprise! Then you would get quite the look!!
