ISO: ISO: Zucchini recipe

Hi! My mother in law use to make this wonderful dish that had both yellow & zucchini squash, fresh tomatoes, onion, green pepper & cheese in it. I guess I could just throw it all in a dish & see what I get, but was hoping someone might actually have an actual recipe?

This is pretty easy to make and good too. Here's what I do.....

Slice an onion and a green pepper. Saute briefly in a large warmed saute pan with olive oil and a little butter. Meanwhile, wash and slice zucchini and summer squash. Put the slices on top in one layer. Salt and pepper, and I grind a little Italian seasoning over them. Cover and let it steam briefly. While this is going on, peel several large tomatoes and slice thickly. (I squeeze out some of the juice and seeds before slicing) Put the tomato slices on top of the squash, season again and cover with whatever cheese you like. American is OK, parm,goat etc. Cover and cook briefly until the cheese melts through the veggies and they are tender but not mushy. All this is done on no more that medium heat. Good hot or at room temp and delicious in an omlet the next day. Good luck. Everyone's mother used to make this! smileys/smile.gif

Thanks for the welcome & the help. Just what I was looking for! What a wonderful site. I just love recipes. My DH is amazed I enjoy just reading them...sometimes I will actually cook, ha!
