It turned out great. I really loved it and hubby was grousing about where was the meat.

It ended up getting a little dry so I added a little chicken broth throughout the baking time. I also used dried cannelloni beans which keep their shape much better than canned. I am not sure canned would have held up during the baking process. I will definitely be making it again, and the leftovers are going to be whirred into soup for lunch today. It was a Weight Watchers core friendly recipe that I am very pleased with.

I have done it before with leftover briami

and I loved it. It should be even better with the beans in it. Actually, cornbread with honey butter can be on this WW program, but in keeping with the spirit of the program, I will add wild rice, barley and lentils to it instead. Yum!

 
Soup! What a clever solution for leftovers... I don't suppose hot cornbread with honey butter
