Another fact you should know is that I need reading glasses. For. Everything. That means there are reading glasses in the kitchen, the living room, my bedroom, the bathroom, etc. At one point while testing various “antlers” on Max, I looked around for my reading glasses. What I DIDN’T REALIZE was that I had a pair shoved on top of my head, a pair tucked into my shirt front and I was wearing a pair. While LOOKING for a pair.

I suspect they've been listening to CNN with regard to the Ukraine situation and a coup is planned:

Click on the link and scroll downward. Amazon provides a download with the full recipe and his very precise instructions. Love this guy. I used my scale for everything and the only thing I didn't have was "French-style" butter. Oh, I also added 1/2 tsp ground cardamom and 1/4 tsp almond extract to mine.

I've shortened my instructions to the GI Shower version.

Christmas Sablés / Sablés de Noël
Yield: About 5 ½ dozen 2-inch cookies

INGREDIENTS
All purpose flour / 300 grams / 2 cups
Almond flower, skinless / 100 grams / 1 cup
Ground cinnamon / 2 grams / 1 teaspoon
Butter (French style, 82% fat) / 200 grams / 7 ounces
Vanilla extract or paste / 10 grams / 2 teaspoons
Granulated sugar / 150 grams / ¾ cup plus 2 teaspoons
Sea salt / 3 grams / teaspoon
Whole eggs / 40 grams / 1 extra-large less 4 teaspoons
Egg wash: 60 grams egg, 1 tsp heavy cream, dash salt

1. Sift dry ingredients
2. Beat butter, sugar and spices for 2 minutes.
3. Add egg. Beat 2 minutes
4. Add flour mix
5. Divide in two, wrap well in plastic and chill for 2 hours minimum
6. Roll out on lightly floured surface 3/16” thick (I used wooden dowels).
7. Cut out cookies and transfer to parchment’d cookie sheet.
8. Brush with egg wash.
9. Wait 10 minutes and brush with egg wash again.
10. Bake 325 for 15-20 minutes

The cookies will keep for a month in a tin or an airtight container. Do not freeze.

"Almond flower"? These sound really good and not too sweet. Are they sturdy? Delicate? Crumbly?
