It was my in-law

Let's try that again, shall we? It was my in-law's 60th wedding anniversary last night.

So we had a little dinner party for them. Everyone really liked the food, although I'm never having a dinner party on a work day again. I was ready to collapse by the time I got dinner on the table, but three glasses of red wine soon took care of that. smileys/smile.gif

My only crisis came when I realized that I'd put the mushrooms on a rimless cookie sheet. Naturally, there was a lot of water extruded from the mushrooms and they all slid around when I tried to get them out of the oven--nearly lost the whole batch. But my husband came to my rescue. I must make a note about that on the recipe card.

Speaking of recipe cards, remind me NOT to write down recipes in fountain pen ink ever again. It runs FAR too easily.

Oh, and we were SWIMMING in food because one of the couples cancelled at the last minute. The husband accidentally tripped his wife and she fell. They ended up taking her to the hospital; sounds like everything is okay, but these are all senior citizens so everything gets checked out. But we have TONS of leftovers.

One guest called today for the marinade recipe for the Tuscan Grilled Vegetables!

Grilled Tuscan Vegetables

We didn't quite follow the directions. Instead of chilling, letting sit, and serving at room temperature, we just grilled them and served them immediately. I think that the flavor would have been more intense if we'd let them chill and blend, but the vegetables were still really good. One of the guests had seconds, and he never eats vegetables (his wife called for the recipe today--said they'd already gone out and bought an eggplant!).
