One of the first recipes I ever got on the internet probably30+ years ago was a crockpot recipe that put a piece of chuck or round in the crockpot with a jar of Italian pepper rings (peperoncini).  Cooked for X hours, shred the meat and make a hoagie with cheese.
Well, I had half of a pork butt (making green chile pork stew with the other half) so I did it with pork. Braised at 300* for 3 hours. I have it shredded. The peppers are cooked down and all the liquid is cooked off. Taking it to the beach next week for a lunch sandwich. I think this on a roll with fresh mozzarella and maybe a strip of roasted pepper. Rolled in foil and heated. If I took my panini press I'd do that--and may do that in a skillet. It tastes goo
