I have a Messermeister Potato Peeler and decided to try that. Ends were cut off the squash, then I laid it on my cutting board and started peeling away from me. Worked like a charm, I was done in no time, used a little more force on the rounded edges but very doable. That little gadget did the job better than anything I have tried. It is cut into chunks and going to oven roast with Penzeys new Tsar Russian spice which has cinnamon, among other things, evoo and maybe a touch maple syrup.
