Its been a hard 2 weeks This is what I have been up to

Sorry if I am not typing or spelling right.

I just met my future inlaws last week by myself, I was sent down to Redmond Orgeon( for 10 days) to help with the house and(father) which we are now being told has Altimzers, I knew this when I walked in the door. (boy does he get mean) Awhile back I worked in this field as a Head Cook/ Dietary and had to take alot of classes to deal with Altimzers. While I was there I made alot of foods for his mom and dad before I left now have to go back for a few days but my love is coming this time. Boy am I tried(and she isn't all there either). Here is what I am going to be making in three days. Any other ideas will help.

Breakfast, Lunch, Dinner and Snacks

Breakfast 7:30 -- 8:00

1 Biscuit, Sausage Gravy, 1 Egg and Fruit

1 Pancake, 1 Egg and Fruit

Oatmeal, Fruit and 1 slice Toast

2 slices of Bacon, 1 Egg, 1 slice Toast or Fiber Muffin

Cereal and fruit

1 Fiber Muffin, 1 Egg, 1 Ham or 2 Bacon or 2 Sausage

Snack 10:00

4 Peanut Butter Crackers Crystal Light juice

Yogurt w Fruit Crystal Light juice

Apple and Peanut Butter Water

Granola bar

Cheese and Crackers with some Summer Sausage

Hard Boil Egg, Fruit

Cottage Cheese w/ Fruit

Lunch11:30 -- 12:00

Soups- Bean and Ham, Asia, Chili, Split Pea

Sandwiches- Ham, Turkey, Egg, P&J

1/2 C Soup, 1/2 Sandwich with Cheese, Spinach or Lettuce & Fruit

1 Slice Meatloaf, 1/3 C Rice or Mashed Potato, 1/3 C Green beans or Corn

1 Slice Lasagna, Salad or Veg and Fruit

1 Burrito, Veg and fruit

1/2 C Beef Stew, Bread and Fruit

Breaded Fish 1/3 C Rice and Veg, Tomato juice

Snack 3:00

Something from above

Dinner 5:00-- 6:00

Turkey Roni, Salad, 1 Bread

Beef Stew, 1 Bread and Fruit

Meatloaf, Potato's and Veg

Chicken Pot Pie, Fruit

Lasagna, Salad and 1 Slice Bread

Pork Chop and Gravy, Rice or Stuffing, Veg

Beef Strognoff w/ Noodles, Veg, Fruit

Pork Roast, Potato's and Veg

Dessert 7:00-- 7:30

Pudding or 1/2 C Ice Cream, Jello

Cookies, Brownie

 
looks like you have very good variety and healthy selections. Do they have dietary restrictions?

I noticed the Crystal Lite and wondered if they need to watch their sugar. Baking up some cookies and packaging them in small ziplocks for the freezer might be good for desserts/snacks. I see some yogurt listed---yogurt parfaits with granola or Kashi cereal and some berries/fruit is a nice treat. maybe some frozen waffles that just take a toaster to warm them up. I noticed frozen pancakes also---your homemade pancakes could be frozen in 2s or 3s. I baked some poundcake and banana bread for my Dad and sliced it and put 2 slices per ziplock in the freezer for him to take out as needed. Bless your heart---this is a tough time.

 
They both were Diabetic now they have taken him off all that

just need him to absore the food he eats. He has lost 25pds in 1 mth. I think it was what she was feeding him. Hot Pockets, Corn Dogs etc. For the 10 days I was there they didn't eat that stuff. He really likes the Asia soup Tracy offerd he ate the whole thing in 2 days I did add extra vegs and noodles made a double batch before I left. Getting extra help in there is hard. The good side is I will be there only 3 days and Tom will be there also. I have to make sure to take care of myself as I am now just getting a handle on the stuff I have been going though for the last year. Will let all know how it all turned out, maybe I can someday post a recipe. But for now I will use the ones everyone has been posting plus my own. Love to all

 
Amen to that. Taking care of children is one thing, but Alteimer's is a whole 'nother level.

Your meals sound healthy and interesting. Adding in fiber is always a challenge with my mom. I try to slip it in without making a point about it. Constipation can make even the nicest person cranky.

 
My aunt who was in a senior home - almost assisted-living, really liked

I wrote that my aunt and her friends that got their meals at the dinning room really liked it when they served quick breads (would freeze well too), biscuits with strawberries, cookies, pies.

Lunches - egg salad sandwiches, macaroni and cheese, club sandwiches, blts, cottage cheese.

For main meals - pizza (believe it or not), pot roast, roast ANYthing, sliced beef with mashed potatoes and gravy, breakfast for dinner, tuna casserole, scalloped potatoes, sweet potatoes - all the things you think of when you think of comfort, retro foods.
