It's cold and snowing (again) and I don't feel like going out. I have 2 nice haddock filets

I am such a fan of Randi's Salmon with Pinot Gris Caper Sauce

I have made it often. Actually, I have never made it with Salmon. I have made it with Tilapia, haddock and swordfish. The sauce is fabulous. The trick is to really cut the peppers very tiny. My DH, as well as others have said that this is "restaurant quality." It has a wonderful presentation and tastes great!

Enjoy the snowstorm. I was soo disapointed when we did not get the snow on Monday! I am so ready for a major storm! I even purchased mini marshmellows!

it's been snowing some every day. I'd like a couple days of sunshine. Even though it's not warm, it's energizing. I guess I have to rely on blasting the Temptations and Elvis to get me energized smileys/wink.gif

 
What about...with potatoes and olives. Very unusual but I like it. Thanks to Steve in LA.

I've done this with halibut and haddock.

Roasted Halibut with Potatoes and Olives

3 BAKING POTATOES, peeled and sliced about ¼ inch thick
4-6 ounce pieces HALIBUT, SNAPPER or other WHITE FISH
SALT and FRESHLY GROUND BLACK PEPPER
¼ cup OLIVE OIL
2 tsp chopped GARLIC
3 BAY LEAVES
12 KALAMATA OLIVES, pitted
¼ cup WHITE WINE
¼ cup WATER
1-16 ounce can ARTICHOKES, quartered

Preheat oven to 450 degrees F. Boil potatoes until crisp-tender, about 5 minutes. Drain and place in bowl. Toss with olive oil, garlic, bay leaves, black olives, artichokes, wine and water. Season fish with salt and pepper. Place potatoes in a baking dish along with marinade. Top with fish. Bake 25 - 30 minutes or until potatoes are crusty and fish is cooked. Serves 2.

days - no wonder my whole family has S.A.D.! We missed the bulk of the snow, but the lack of sun has to go! I guess it's payback for the few days of 60+ temps that we had ;o)

As far as the fish fillets go, how about spicy steamed fillets?

2 fish fillets
1 oz white wine
Salt and pepper to taste
1/4 cup fresh mushrooms
1/2 onion, chopped
Small chili pepper, chopped
1/2 cup carrots, chopped
Small tomato, sliced thinly
Olive oil

Marinate fish in refrigerator for 2 hours in a mixture of wine, salt, and pepper.

Place in the bottom of a greased casserole dish with olive oil, onion and chili pepper; top with mushrooms, tomato and carrots. Cover with foil and bake for 10 minutes or until flakey.
