I've been gone a few days - anyone have ideas for easy to transport (picnic) foods for the 4th?

So far we have hamburgs and leftover fried chicken, cranberry salad, and macaroni salad. I'd love to see what others are planning.

 
Here's our picnic

that we're doing Saturday since hubby has to work tomorrow night.

Marinated Boccocini
Muffalata
Antipasti Pasta Salad
Garlic salad
Individual White-Chocolate Tiramisus

We're actually having an indoor picnic since the weatherman says it will still be over 110 on Saturday.

Warning: VERY potent. Hubby used to take the fixings when he'd be on a duty weekend aboard ship . The medical dept would become the most popular spot on the ship as soon as the aroma of the garlic hit the air. A country ham steaming in the autoclave didn't hurt...

It's easy to make changes to the basic formula.

Garlic Salad

Serving Size : 4 Preparation Time :0:20

Amount Measure Ingredient -- Preparation Method

3 Cloves Garlic
1/2 Tsp Salt
1/4 C Lemon Juice
2/3 C Vegetable Oil
1 Tomato -- chopped
1 Head Romaine Lettuce -- torn bite size
1/4 C Grated Parmesan Cheese

1. Mash garlic in a large tupperware-type container. Add salt, lemon juice, oil & tomatoes. Cover and chill at least 3 hours.
2. Toss with Romaine & Parmesan, let sit 10 minutes before serving.

Thanks Desertjean. It does sound good. We stuck with the old stand-bys (again). It rained pretty

constantly, and threatened thunderstorms, so we cooked inside and ate in the garage.

 
Even tho it's 'only' going to be 113 tomorrow

We're going to do our picnic indoors. Looking to the positive, this means no bugs smileys/smile.gif
