I've checked four stores and the 3lb box of Diamond Crystal Kosher Salt is no where to be found.

They have a 13oz round container but not the larger size. I googled it and the prices range from $14.99 for a 3lb box to $2.29 at Costco with $20.00 shipping!!

I don't know if it's better. I use it because chef nephew said that's what's

used in the restaurants he's worked at. Something to do with the size of the grains.

I just read something in Cook's Illustrated about amounts to use:

1/4 cup table salt equals

1/2 cup Diamond Kosher or
1/4 cup plus 2 tbsp. Morton Kosher

I believe Diamond's salt crystals are larger so you have to use more.

But I think it gives me more control without going too heavy. I've been using it for years and I'm old and set in my ways.

C that is so funny! We will be shopping at Publix in SC and I was thinking about how I would miss my

HEB!! HEB stands for Harry E Butts -- really! It is a huge central texas grocery chain. They also operate the Central Market stores, which are fabulous.

Clerk told me once...to make room for gluten-free foods, other things have to go. Need shelf space.

Did they move the salt to the baking isle? I see it there sometimes too.

I'd bring it to the attention of the grocery store. They'll either tell you where it is, or dropped a product that is more in demand than they think.

The good news is, when you do finally find it, you won't need another box for a year! Mine seems to last forever....
