I've got brie, phyllo, dried cranberries and walnuts... any recipes for phyllo wrapped brie?

Not a recipe, but I've seen it done. It involves cranberry sauce, so make a sauce however you do

The walnuts would be a nice addition. Layer the phyllo, basted with butter, put the wheel of brie in the center and top with the cranberry sauce. Fold up the phyllo, bake, and voila.

Despite the pastry, you'll still need crackers or something else calorific to scoop it up. Don't you love Thanksgiving?

 
One method is to cut pieces to fit mini muffin tins, fill with

a piece of brie and sprinkling of dried cranberries and nuts, then bake.

Another way is to make, say triangles, by taking long strips of phyllo, layering about 3 or 4 pieces together brushed with melted butter between each piece, then put a big dollop (a tbsp or two depending on how wide your strips are)and start rolling the strips to achieve a triangle shape. Then bake them off. They can even be frozen and baked another time.

The mixture you have sounds very similar to one of the baked brie appetizers (at the link) I'm taking for Thanksgiving tomorrow. I'm using dried cherries but your dried cranberries would be great too.

There's really no need to stack the sheets together if you're only going to use one sheet for your desired filling. Just work quickly to keep the strips from drying out. I've made a million of these lil triangles (okay, maybe only half a million...lol) and usually use between 2 and 4 sheets per triangle, instead of one sheet.

Top-Rated Recipe, November 2001
WARMED CRANBERRY BRIE

Makes 8 appetizer servings

1 (16-ounce) round Brie
1 (16-ounce) can whole-berry cranberry sauce
1/4 cup firmly packed brown sugar
2 tablespoons spiced rum*
1/2 teaspoon ground nutmeg
1/4 cup chopped pecans, toasted

TRIM rind from top of Brie, leaving a 1/3-inch border on top. Place Brie on a
baking sheet.
STIR together cranberry sauce and next 3 ingredients; spread mixture evenly over
top of Brie. Sprinkle evenly with pecans.
BAKE Brie at 500° for 5 minutes. Serve with assorted crackers and apple and pear
slices. Prep: 10 min., Bake: 5 min.

*2 tablespoons orange juice may be substituted for spiced rum.

 
This is just what I did - expect I used dried cranberries soaked in cherry liqueur with walnuts

and the brown sugar, all wrapped in phyllo. It *looks* good enough to eat, so will let you know tomorrow smileys/smile.gif
